If you run a small bar, you may be wondering what your options are when it comes to ice cube machines. Do you have enough room in the back storage area for a full size ice machine? The area in the back will need to have a drain and a water supply, and ideally the back area should be cooler since humidity and temperature both affect the rate at which an ice machine can produce ice.
If the answer to the above questions is no then don’t worry, there are alternative machines that will produce ice for your needs. Probably the best solution is an under the counter model. A small half height ice cube machine is ideal because they can be hidden out of sight under the bar area, and they are very handily located for the staff to access.
The ice maker will still have to be plumbed into the water mains, and it should have a drainage area as well. Some under the counter models produced these days have the facility to be connected to a remote drain, but normally you will need a drain under the machine so that it can disregard the melted water. Check with your local health and safety authority about their requirements, but normally a gap is needed below the ice cube machine, and this is normally provided by building in a recess in the floor.
Under the counter machines are just as efficient as the larger full scale ice machines, but they may produce ice at a slightly slower rate. This shouldn’t be a problem however if your bar is small. The only regular maintenance that is needed for ice machines for the first few years is changing the water filter. This is simple enough to do every 6 months.
